I have to cook healthy food at certified farmers markets in Monterey, California, 93940 How I can find one, I have no idea about these kitchens in the U.S.

Talk to your local health inspector and ask for their list of certified healthy cooking. Churches and community centers often fully functioning kitchen with utensils and equipment. It may require a donation or lease it, but they are of mind and the community can offer volunteer to help in their efforts.
