Ok, I have these ingredients and I'm totally confused by something to fix for dinner for four people.?

Here my list of ingredients (the need for vegan). White Sweet Potato Eggplant Vegetable Potato Turnip Beet Greens Beet red onion, carrots, celery, cabbage, sugar snap peas Grains: Quinoa Millet Rice Fruit: Apples Grapefruit Oranges Frozen Fruit: Assorted fresh herbs mixture of organic fruits, nuts basal Mint Parsley garlic and seeds: sesame seeds flax seeds should not be a three-course meal, something nice for filling, and that is me, my two grown daughters and 3-year-old girl who loves something with vegetables! Oh, I'm cereals, except flour maize (corn starch). I have no tomatoes … not on my list …
