Corporate Marketing in the restaurant industry?

I currently I have my MBA in marketing, I learned many things on and I'm very interested in the restaurant industry. I do not want to work for a restaurant, for example, an administrator, but I work in marketing for the restaurant industry. I like to follow trends, operating costs, store locations and openings, etc. What kind of jobs compared with the commercial industry restaurants, either as consultant or researcher. I very interested in the ecological area, natural and healthy restaurant concepts. Maybe a job to find ways to improve health and nutrition of the food industry. Thoughts, comments and tips are greatly appreciated.
