Organic & Biochemistry advice?
I am extremely interested in the science of food and nutrition. Based on catalog descriptions of organic and biochemistry classes, it sounds as if there will be a lot of food interaction/reaction, metabolism issues, acid/bases/molecular material that could be applied to food chemistry, etc. Is there anyone out there who has taken college level organic/biochemistry courses and could tell me if these are covered or does it sound like a sales pitch?
The college orgaic chemistry & biochemistry will not talk much about food chemistry nor nutrition. Organic chemistry is a fondamental course of biochemistry and biochemistry is a foundamental course of food chemistry and nutrition. We know that if cook noodle in boiling water for a while it becomes softened and become kinkd of sticky paste if we prolong cooking. This phenomena will be explained in the food chemistry course about the change structure of starch but not in biochemistry nor organic chemistry. However, the basic chemical structure of starch will be taught in biochemistry and also in organic chemistry. Organic chemistry will mention that the structure of starch is polymer of glucose with specific linkages. In biochemistry, this basic knowlege also will be mentioned and also mentioned how starch was made in the nature. However, biochemsitry will not mention what happens about the starch in noodles. As you can see, food chemistry is a special branch of biochemistry.
Another example, somebody believe that L-carnitine is fat burner, is it truth or myth? In college biochemistry, L-carnitine is mentioned in the chapter of lipid metabolism. If you want to know more, this issue is not in food chemistry nor in biochemistry but in nutraceutical.
Highly recommend you study in the Department of Food Science and Nutrition if you are interested in food interaction/reaction.
