Possible dinner party…what to make/do?

It would be 4 couples, all have 1 – 4 kids each.

1 couple is strictly organic & formerly vegetarian (they’ll eat chicken & fish these days)

Another couple is italian & eat & cook some wonderful foods

3rd couple is young w/ simple palates and I don’t want to scare them w/ different foods!

We, kids included, eat anything.

So I was trying to figure out a menu, something simple – yet flavorful. I thought BBQing some chicken or fish & ….what? Dessert? Side?

I thought of a salad but one of my GF’s (not these couples) freaked out when her salad was “green” – she’d only eat iceburg. So now I’m unsure if a salad is safe!

Any ideas welcome – thanks in advance!!
Ew. Olive Garden??? Do people even eat there anymore?

I’d like some adult answers please.

I make this amazing chicken dish that you might be interested it and it can be all organic too. First I peel a bunch of potatoes and drop them in a pot of water for mashed potatoes. I add some chopped garlic and let that boil.

Second, I sauté a chicken breast for each individual (can do 1/2 for the kids if they are younger). While these are cooking I slice a ton of different veggies: peppers, onions, carrots, mushrooms, green beans, Brussels sprouts, beets, and artichoke hearts, you can use any veggie that you like.

After the chicken is cooked (or at the same time if you are good). I sauté the veggies, always starting with the densest. These I cook with in some olive oil and some seasonings.

Once the potatoes are done mash them like you usually do. Then put a scoop of potatoes in each dish (I usually use shallow wide bowls, like pasta bowls). Place a mound of the mixed veggies on the potatoes and top with a chicken breast.

Place 2 pieces of provolone cheese on top of the chicken breast and pop that into the oven and broil until the cheese melts and starts to bubble. I have never had a complaint about this dish. You can serve it with a fresh salad, crusty French bread, and maybe sorbet for dessert.

If you are looking for fish I would so something basic with a light flavoring. Something like Tilapia, cod, or whitefish. Salmon and Tuna can be too strong for some people.
