ITALIAN SPAGHETTI
1 pound hamburger
Average, 1 onion
2 green peppers
1 ½ teaspoon salt
1 tablespoon fat
½ pound spaghetti
Mix meat, onion, chopped green pepper. Add salt. Form meat
into small balls and fry until golden brown. Make a sauce with the following:
¼ cup onion ½ cup grated cheese
2 green peppers ½ cup tomato sauce
1 quart tomato puree 1 tablespoon paprika
Cup ¼ cup sugar ½ teaspoon mustard
1 ¼ cup c. teaspoon chopped celery salt
Mix all ingredients for the sauce and simmer 1 ½ hours.
Add the meatballs and simmer 1 hour. Cook the spaghetti in salted water
until tender. Drain.

In a skillet big cook onion in hot oil until tender.
The meat and garlic, sauté lightly. Add remaining ingredients.
Simmer uncovered 1 ½ -2 hours or until sauce is thick and Nice.
Stir occasionally. Remove bay leaf. Serve hot over spaghetti.
Garnish with Parmesan cheese.
Yield: 6 servings.
Duration: 2 hours.

 

CHICKEN ARTICHOKE PASTA

1 pound boneless chicken breasts cut into bite the skin

1 (141/2-oz.) Cans basil, garlic and oregano to taste diced tomatoes

1 (6 oz) Jar marinated artichoke hearts, drained and chopped coarsely

1 (2.2 ounces) sliced black olives, drained

In a lightly oiled skillet over medium-high heat, saute the chicken until cooked. Pass to a plate.

In the same pan, add tomatoes and bring to a boil. Reduce heat, add the artichoke hearts and olives and cook until thickened, about 10-15 minutes.

Meanwhile, prepare the pasta according to package directions.

Add chicken to sauce and stir to heat. Add the drained pasta and stir to coat.

Makes 4 servings.

 

POLISH PYROGY
Everybody loves
this dish. One could eat every day.
Mass
5 cups flour
2 cups hot water
1 tablespoon salt
4 tablespoons oil
3 eggs
1 tablespoon vinegar
Mix flour and salt.
Mix eggs, oil and water to make 2 cups.
Do the same in the flour mixture adding water.
Mix well and knead. (As you knead, the better)
Roll the dough flat, thin and cut into 3.2 inch squares
Put filling (below) on each edge of the weld and the flour used to tweak
seal closed.
FILLING
Mashed Potatoes.
Cottage cheese course.
Salt and pepper.
Mix until, of course.

Drop into boiling water and boil for 5 minutes. No No place

Mix flour, sugar and cinnamon. Cut butter in a bakery
mixer. Place sliced apples in unbaked pie bottom. Sprinkle
crumb mixture on top. Add the cream. Bake at 375 for 45 minutes
or until apples are tender and rich syrup has formed.
